Summer time is grilling time – no two ways about it! Summer would just not be complete with out regularly firing up that BBQ grill or Traeger and creating a meal that wows the entire family. That’s what this recipe is ALL about! Chorizo Burgers with Ranch Chipotle Sauce is the real deal. Your going to be hard pressed to find burgers that are better than this one!

Chorizo Burgers with Ranch Chipotle Sauce is an American classic with a twist of Mexican cuisine mixed in and boy do the flavors mix well! The recipe is pretty simple too – so it can double as a weekend meal or even a weeknight meal. Either way your belly is going to be SO full – you really do not even need sides with these burgers – they are SO filling.

To start Chorizo Burgers with Ranch Chipotle Sauce you will sauté the onions until translucent and caramelized over medium heat. While the onions are cooking mix together the ground beef, break crumbs and chorizo until combined. Then you will form into 6 patties leaving an indent in the middle of each one; set aside.

When the onions are done, place the onions (leaving behind the juices), roasted pepper, buttermilk, ranch, mayo, paprika, cayenne and cumin in a food processor pulsing until well combined. I like to sometimes add a little more roasted red pepper for a stronger flavor in the Ranch Chipotle Sauce – play around with it and adjust the amount by personal taste.

Then hit the grill with your Chorizo Burger patties. Cook for 8-10 minutes per side or until temperature reads 165F. Then top with your favorite cheese – I like to alternate between pepper jack and provolone. While the cheese is melting, mash up the avocado with the salt leaving in a few small chunks.
